tasting notes:

appearance: bright, pale straw with greenish highlights.
nose: aromatic and expressive with vibrant notes of citrus zest (lemon and lime), white peach, green apple, and hints of aromatic herbs like thyme and rosemary, underpinned by a delicate minerality.
palate: crisp and refreshing, with a lively acidity that balances the smooth texture. flavors of citrus fruits, green apple, and hints of pear lead into a subtle herbal character. the mid-palate displays a slight salinity, giving the wine a savory edge, which is characteristic of the vermentino variety. the finish is clean, with lingering citrus and mineral notes.
mouthfeel: medium-bodied with a fresh, vibrant structure. the wine’s balanced acidity and minerality provide a long, refreshing finish.
best served: chilled, at 8-10°c (46-50°f).
food pairing: perfect with seafood, grilled vegetables, fresh salads, light pastas, and white meats. also excellent as an aperitif.

winemaking:

the grapes are hand-harvested two weeks earlier than typical for the area for acidity and freshness. grapes are then carefully sorted, and pressed extremely gently to avoid overextraction and greenness. fermentation takes place using wild yeast in stainless steel tanks at controlled temperatures to preserve the fresh, fruity character of the vermentino grape. after fermentation, the wine undergoes a brief period of sur lie aging in used 500l oak barrels to enhance texture and complexity, followed by sediment filtration and bottling. wild yeast fermentation, minimal sulphur additions during pressing and prior to bottling. no other additions, minimal intervention.
